I made some of the Texas Cowboy Cookies this past weekend but used them to make ice cream cookie sandwiches. Oh my goodness, they were great. Bake as directed and let cool then put a scoop of ice cream on one cookie and top with another cookie, roll the edges of the ice cream in mini chocolate chips, wrap in plastic wrap and freeze until ready to eat .... YUMMY and REFRESHING!
