Pumpkin Parfaits
Here's another simple dessert that can be partially made ahead of time.
Prepare the Pumpkin Bread as directed. Spray muffin tin with non stick spray.
Fill 1/3 full with batter, bake at 350 until done, about 15-20 minutes. These
can be made ahead of time or even frozen until you are ready to prepare them.
Place the pumpkin rounds in the bottom of a martini glass or other shallow
glass. Top with a scoop of Rum Raisin or Vanilla Bean ice cream, drizzle with a
dash of spiced rum, top with whipped cream and chopped
pecans. Enjoy!
Pumpkin Cranberry Bread
1 pkg. PUMPKIN BREAD MIX, prepared
1 (8 oz.) can pumpkin
2 eggs
½ c. oil
1/3 c. water
1 c. dried cranberries
Prepare PUMPKIN BREAD MIX as directed. Add cranberries. Pour into greased 9x5” loaf pan and bake at 350 for 50-60 minutes or until done.

Pumpkin Granola Muffins
1 pkg. PUMPKIN BREAD MIX, prepared
1 (8 oz.) can pumpkin
2 eggs
½ c. oil
1/3 c. water
2 tsp. crushed granola
Prepare PUMPKIN BREAD MIX as directed. Line muffin tin with cupcake liners or spray with non-stick spray. Fill ¾ full with pumpkin batter. Top with 2 tsp. crushed granola. Bake at 350 until done or golden brown.
