Do you know where the recipe for Chicken Enchilada Soup came from?  We have experimented with this one for over a year!  If you have ever tried this soup from Chili’s Restaurant, it tastes very similar.  We were trying to get that same taste, but this one was difficult to put into a package.  After so many failed attempts, we finally came up with this winner.  Everyone at the shop RAVED over it!  Someone makes this soup at least once a week up at the shop for lunch because we all love it so much!

The Chicken Enchilada Soup is always a crowd pleaser, no matter what time of year. It is wonderful as a soup in the Fall and Winter, and a great "add to" soup for veggies and really any leftover meat. In the Spring and Summer it is good as a dip with Cream Cheese and shredded cheddar. Very versatile!

Easy Chips & Chicken Casserole
1 (13.5-ounce) bag corn chips, divided
7 tablespoons Gourmet Cupboard® Chicken Enchilada Soup Mix
1-1/2 cups water
1/4 cup milk
1 cup sour cream
1 (4-ounce) can diced green chilies, optional
3 cups cooked, shredded chicken*
2 cups shredded Monterey Jack cheese, divided
1/2 cup chopped onion, optional

1. Preheat oven to 350 degrees. Lightly spray a 13x9x2 baking dish with non-stick cooking spray. Cover the bottom of baking dish with ½ package corn chips; set aside.
2. In large bowl, combine soup mix, water, milk, sour cream, green chilies, chicken, and 1 cup of cheese; stir until well blended.
3. Spread ½ of chicken mixture over corn chips. Cover with remaining corn chips and remaining chicken mixture. Sprinkle remaining cheese and onion over casserole.
4. Bake uncovered for 25 minutes..

Dip Recipe

3-4 Tablespoons chicken enchilada seasoning

1--10 oz can rotal tomatoes

2--8 oz blocks cream cheese

1--lb sausage cooked and drained (you may also use chicken or hamburger)

put in crock pot to melt cream cheese and serve hot with tortilla chips

if too thick, add some milk

Hot Sausage Enchilada Dip

3 T of Seasoning

1 lb Sausage, browned and drained (Jimmy Deans)

2 8-oz packages of creamed cheese

1 can diced tomatoes and Chiles (15 oz)

Put in crockpot for 2 hours and serve.

So yummy and I have a lot of repeat customers wanting this mix to make the dip

Creamy Enchilada Dip
3-1/2 tablespoons Gourmet Cupboard® Chicken Enchilada Soup Mix
1 (10 ounce) can diced tomatoes with green chilies
2 (10.75 ounce) cans cream of mushroom soup
1 cup milk
1. Mix all ingredients together until well blended.
2. Heat and serve. Use a small dipper slow cooker to keep warm on your serving table during a party. Serve with chips, fresh veggies, pita wedges, toast points.

Chicken Enchilada Ranch Style Dressing
1/2 cup sour cream
1/2 cup mayonnaise
3 tablespoons Gourmet Cupboard® Chicken Enchilada Soup Mix
6 tablespoons milk (more or less depending on desired consistency of dressing)

1. Combine ingredients in a bowl, adding milk in small amounts until desired consistency of dressing is reached.
2. Cover and chill for 2 hours before serving.

Chicken Salad Sandwiches
1-1/2 pounds boneless skinless chicken breasts
1 tablespoon lemon juice
1 tablespoon low sodium soy sauce
3 tablespoons Gourmet Cupboard® Chicken Enchilada Soup Mix, divided
1/4 cup mayonnaise
2 tablespoons grated Parmesan cheese
1/2 teaspoon black pepper, optional
12 slices whole grain bread
6 romaine lettuce leaves
2 large tomatoes, sliced

1. Preheat broiler. In large zip top bag, combine chicken with juice, soy sauce and 2 tablespoons soup mix, set aside.
2. Combine remaining soup mix with mayonnaise, cheese and black pepper, set aside. Broil or grill chicken for 3-4 minutes on each side or until no longer pink in center, cool; shred chicken with 2 forks.
3. Combine chicken and mayonnaise mixture. Divide chicken mixture evenly over each of 6 slices of bread. Top each with 1 lettuce leaf and 2 tomato slices, and remaining slices of bread.

Chicken Enchilada Chicken
3 pounds boneless, skinless chicken breasts
7 tablespoons Gourmet Cupboard® Chicken Enchilada Soup Mix

1. Preheat oven to 350 degrees. Lightly spray a 13x9x2 baking dish with non-stick cooking spray; set aside.
2. Rub soup mix on both sides of chicken breasts and place in prepared baking dish.
3. Bake uncovered for 45 minutes or until no longer pink in center and juices run clear.

Enchilada Chili
1-1/2 pounds lean ground beef or turkey
1 onion, chopped
1 (14.5-ounce) can low sodium diced tomatoes with green chilies, undrained
2 tablespoons Gourmet Cupboard® Chicken Enchilada Soup Mix
1 (8-ounce) can tomato sauce
1 cup water
1-1/2 cups frozen whole kernel corn
1 (15-ounce) can chili beans in sauce, undrained
1 cup corn chips, optional
1 cup Pepper-Jack cheese, optional

1. Brown meat and onion over medium high heat, about 10 minutes, stirring frequently; drain.
2. Add tomatoes, soup mix, sauce, water, corn and beans into meat mix and stir. Heat to boiling; reduce heat to medium low, cook 10 minutes; stir occasionally.
3. Sprinkle individual servings with corn chips and cheese, if desired
