I made the cheesecake this weekend. As the package said, because of the size pan I used, I had left over mix. So I got out my cupcake pan and liners and made mini cheesecakes with the left over batter. I put the main cheesecake with the graham cracker crust in the oven to bake for 10 min at 450 while I filled my 12 "extra" cupcakes. The cupcakes baked at 450 for about 5 min and then I lowered the temp to 250 for 1 hour for the main cheesecake. I baked the cupcakes for about 35 or so minutes. They turned out fabulous!!!
My husband has actually chosen to eat the cupcake cheesecakes rather than the "real" cheesecake. He even requested the next batch to be ALL CUPCAKES!! I think he likes the few bites at a time and does not have to get a plate to eat!

Caramel Apple Cheesecake
1 21oz can apple pie filling
1 9inch graham cracker pie crust
1 TGC Cheesecake mix prepared as directed
1 TGC Caramel Apple Dip mix prepared as directed

Preheat oven to 350°F
1)Reserve ¾ cup of the pie filling; set aside. Spoon the remaining filling into the pie crust.
2)Pour the cheesecake into the crust and bake for 30 to 45 minutes or until the center is set. Cool to room temp
3)Mix the remaining pie filling with the Caramel Apple Dip in a small saucepan and heat until spreadable. Spoon the apple-caramel mixture over the top of the cheesecake and spread evenly.
5)Refrigerate the cake until ready to serve.

Oreo Cheesecake

1 pkg. CHEESECAKE MIX, prepared

            3 T. margarine, melted (with graham crackers)

            4 (8 oz.) blocks cream cheese

            4 eggs

            1 c. sour cream

            1 T. vanilla

10-12 Oreo cookies

Prepare CHEESECAKE MIX as directed. In a food processor, chop up 10-12 Oreo cookies. Add the crumbles to the cheesecake mix. Finish preparing as directed. Top the cheesecake with Oreos cut in half or use the mini Oreos.
