During the holiday season I truly enjoyed our wonderful easy mixes. A favorite of everyone is the Black Bean Salsa. I don't use the "chopped" tomato....instead, I use
1-can original Rotel tomatoes - 1-can Black Beans (rinsed) and 1-can Whole Corn.... with the mix... the trick is to make and leave in fridge overnight!! I use olive oil and lemon juice..... so awesome with SCOOPS! Also can carry for a Salad to any function.... for crunch chop some celery and mince one jalapeno for additional KICK
